Ingredients:
For the Grits:
- 1 cup stone-ground grits
- 4 cups water (or a mix of water and milk for creaminess)
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons unsalted butter
- Salt and pepper, to taste
For the Cajun Shrimp:
- 1 lb (450g) large shrimp, peeled and deveined
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- Juice of ½ lemon
- 2 tablespoons chopped green onions
- Optional: chopped parsley and a dash of hot sauce
Directions:
- Cook the Grits:
In a medium saucepan, bring water to a boil. Slowly whisk in grits. Reduce heat to low, cover, and cook for 15–20 minutes, stirring occasionally, until creamy and tender. - Finish the Grits:
Stir in butter, cheese, salt, and pepper. Keep warm. - Season the Shrimp:
In a bowl, toss shrimp with Cajun seasoning until well coated. - Cook the Shrimp:
In a large skillet, heat olive oil and butter over medium-high heat. Add garlic and sauté 30 seconds. Add shrimp and cook for 2–3 minutes per side until pink and cooked through. Squeeze lemon juice over the top. - Assemble and Serve:
Spoon grits into bowls, top with Cajun shrimp, and drizzle any pan juices over the top. Garnish with green onions, parsley, and optional hot sauce.
