Ingredients:
- 1 block (7–8 oz) feta cheese
- 10 oz (about 3 cups) cherry or grape tomatoes
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- ½ teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- 8 oz pasta (penne, fusilli, or your choice)
- ¼ cup fresh basil, chopped
- Optional: extra grated Parmesan for serving
Directions:
- Prep the Bake:
Preheat oven to 400°F (200°C). In a baking dish, add tomatoes, garlic, olive oil, red pepper flakes, salt, and pepper. Toss to coat. - Add the Feta:
Place the feta block in the center of the dish, nestling it among the tomatoes. Drizzle a little oil on top of the feta. - Bake:
Bake uncovered for 30–35 minutes, until the tomatoes burst and the feta is golden on top. - Cook the Pasta:
While baking, cook pasta according to package instructions. Reserve ½ cup of pasta water, then drain. - Mix It All Up:
Remove the baking dish from the oven. Use a spoon to mash the feta and tomatoes into a creamy sauce. Add cooked pasta and stir until coated. Use reserved pasta water to loosen the sauce if needed. - Finish and Serve:
Stir in fresh basil and serve warm, topped with Parmesan if desired.
