Baked Feta Pasta

Ingredients:

  • 1 block (7–8 oz) feta cheese
  • 10 oz (about 3 cups) cherry or grape tomatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 8 oz pasta (penne, fusilli, or your choice)
  • ¼ cup fresh basil, chopped
  • Optional: extra grated Parmesan for serving

Directions:

  1. Prep the Bake:
    Preheat oven to 400°F (200°C). In a baking dish, add tomatoes, garlic, olive oil, red pepper flakes, salt, and pepper. Toss to coat.
  2. Add the Feta:
    Place the feta block in the center of the dish, nestling it among the tomatoes. Drizzle a little oil on top of the feta.
  3. Bake:
    Bake uncovered for 30–35 minutes, until the tomatoes burst and the feta is golden on top.
  4. Cook the Pasta:
    While baking, cook pasta according to package instructions. Reserve ½ cup of pasta water, then drain.
  5. Mix It All Up:
    Remove the baking dish from the oven. Use a spoon to mash the feta and tomatoes into a creamy sauce. Add cooked pasta and stir until coated. Use reserved pasta water to loosen the sauce if needed.
  6. Finish and Serve:
    Stir in fresh basil and serve warm, topped with Parmesan if desired.
