Cajun Shrimp and Grits

Ingredients:

For the Grits:

  • 1 cup stone-ground grits
  • 4 cups water (or a mix of water and milk for creaminess)
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons unsalted butter
  • Salt and pepper, to taste

For the Cajun Shrimp:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • Juice of ½ lemon
  • 2 tablespoons chopped green onions
  • Optional: chopped parsley and a dash of hot sauce

Directions:

  1. Cook the Grits:
    In a medium saucepan, bring water to a boil. Slowly whisk in grits. Reduce heat to low, cover, and cook for 15–20 minutes, stirring occasionally, until creamy and tender.
  2. Finish the Grits:
    Stir in butter, cheese, salt, and pepper. Keep warm.
  3. Season the Shrimp:
    In a bowl, toss shrimp with Cajun seasoning until well coated.
  4. Cook the Shrimp:
    In a large skillet, heat olive oil and butter over medium-high heat. Add garlic and sauté 30 seconds. Add shrimp and cook for 2–3 minutes per side until pink and cooked through. Squeeze lemon juice over the top.
  5. Assemble and Serve:
    Spoon grits into bowls, top with Cajun shrimp, and drizzle any pan juices over the top. Garnish with green onions, parsley, and optional hot sauce.
